Watermelon Dill Sour Beer Recipe:

Ingredients:

  • 5 pounds of fresh watermelon, cubed

  • 1 ounce fresh dill, chopped

  • 5 gallons of sour beer base (you can use a pre-made sour beer or make your own)

  • 1 package of beer yeast suitable for sour beers

  • 1 cup of corn sugar (for priming)

  • Watermelon slices and fresh dill sprigs (for garnish)

Instructions:

  1. Start by sanitizing all your equipment, including fermentation vessel, airlock, and any utensils you'll be using.

  2. In a blender or food processor, puree the cubed watermelon until smooth. You can strain the puree through a fine-mesh sieve if you prefer a smoother beer, but leaving some pulp is fine for added texture.

  3. In a large pot, bring the watermelon puree to a gentle boil. Reduce the heat and simmer for about 10 minutes, stirring occasionally. This step helps to pasteurize the watermelon and release some of its flavors.

  4. Remove the pot from heat and add the chopped dill. Stir well to incorporate the dill into the watermelon mixture. Let it cool to room temperature.

  5. Once the watermelon-dill mixture has cooled, transfer it to a sanitized fermentation vessel. If you're using a pre-made sour beer base, add it to the vessel along with the watermelon-dill mixture. If you're making your own sour beer, add the base beer and the watermelon-dill mixture to the vessel.

  6. Sprinkle the beer yeast over the mixture and gently stir to distribute it evenly. Seal the fermentation vessel with an airlock.

  7. Ferment the beer at a temperature suitable for the yeast you're using. Sour beers often benefit from a longer fermentation period, so let it ferment for at least a few weeks or until the desired level of sourness is achieved. Keep an eye on the airlock activity and take gravity readings to monitor the progress.

  8. Once fermentation is complete, prepare your bottles for bottling. Dissolve the corn sugar in a small amount of boiling water and add it to your sanitized bottling bucket. Transfer the beer from the fermentation vessel to the bottling bucket, being careful to avoid transferring any sediment.

  9. Fill sanitized bottles with the primed beer, leaving enough headspace at the top. Cap the bottles securely.

  10. Store the bottles in a cool, dark place for carbonation to occur. This process typically takes 1-2 weeks. Once carbonated, move the bottles to the refrigerator for aging and further flavor development.

  11. After a few days of refrigeration, your watermelon dill sour beer will be ready to enjoy. Serve chilled in a glass, garnished with a watermelon slice and a sprig of fresh dill.
